Tuna Sushi Bowl

You know how you find a meal that you are just OBSESSED with & could literally eat every single day for every single meal. This is mine! Now, I never used to be a tuna girly, but I am completed converted - so if you don't like tuna, I'd still give this a go! 

The best part is - you can totally customize this to your taste & add/take away things you do/don't like, but here's what I'm obsessed with!

Ingredients:
- 1/2 cup cooked rice (you can use sushi rice but I just used jasmine, it's half the price & does the same job!) 
- Small can of tuna in spring water (completely drained - I squeeze the life out of the tuna so there is NO water left) NOTE - if you don't like tuna, you could absolutely use salmon or chicken!
- 1/2 small red onion finely diced
- 1/2 avocado diced
- 1/4 cup diced cucumber
- Roasted seaweed
- Siracha (adjust to your taste)
- 1 large squirt of Kewpie Mayo (add more if required)
OPTIONAL - Shichimi Togarashi if you want extra spice! (You can buy this from asian supermarkets)

Method:
- Combine rice, tuna, onion, avocado, cucumber, mayo & siracha in a bowl
- Spoon mixture onto roasted seaweed sheets
- Top with ginger (optional)
ENJOY!

At the moment I've been making small batches daily because I work from home, so have the convenience of my full kitchen. However, if I was working in office, I would make a bigger batch to eat over a few days!
